This is my favorite summer pasta! It’s light, flavorful and I love handpicking my zucchinis at the farmers market. The best part of this dish is you can make it in one pot!
Easy clean up for the WIN.
What you'll need!
2 medium zucchini - sliced thin
Coarse salt and freshly ground pepper
8 ounces penne pasta
3 tablespoons extra-virgin olive oil
1/3 cup grated Parmesan
1/2 teaspoon minced garlic
1/4 teaspoon red-pepper flakes
What you'll do!
Toss zucchini with 1/2 teaspoon salt in a colander set over a bowl. Let stand 10 minutes. Add garlic to skillet and sauté 1-2 minutes or until garlic turns golden in color.
Add zucchini to skillet and sauté for an additional 3 minutes.
Add basil; simmer 2 minutes, season with salt and pepper.
Toss & Sprinkle
Cook pasta according to package instructions. Drain pasta and toss with the zucchini sauce! Sprinkle with cheese & serve.
